Minty purple quinoa salad

Ingredients

For the quinoa

  • 1/2 cup uncooked quinoa
  • 1 teaspoon of coconut oil
  • 2 1 cup of water
  • a pinch of salt

For the rest of the salad ingredients

  • Purple cauliflower / or regular cauliflower finely chopped
  • half a bunch of mint leaves
  • purple kale finely chopped
  • small broccoli finely shopped
  • peas
  • cucumbers cut into small pieces

For the dressing

  • 1 tablespoon olive oil
  • 1 lemon
  • pinch of salt and pepper

Directions

  1. Wash the quinoa and toss it with the coconut oil until it starts popping (this will remove any bitterness taste of the quinoa) add the water, and the salt and let it simmer for about 15 mins (until all water is absorbed).
  2. mix with the rest of the ingreients and serve
