Overnight Oats with chia and Raspberry

Ingredients

For the overnight oats (in the evening)

  • 1/2 cup jumbo rolled oats
  • 1 cup unsweetened almond milk (or your choice of milk)

For the chia pudding (in the evening)

  • 2 tablespoons chia seeds
  • 3/4 cup unsweetened almond milk (or your choice of milk)

For the raspberry compote

  • 2 tablespoons frozen raspberries
  • 1/4 cup of water
  • a squeeze of 1/2 a lemon
  • 1/4 teaspoon of maple syrup (or your favourite natural sweetner)

Other toppings

  • 1/2 cup plain yogurt (I use coconut yogurt)
  • fresh or frozen raspberries
  • a sprinkle of desiccated coconut

Directions

  1. Put all the overnight oat ingredients in a small glass jar and refrigerate overnight
  2. Put all the chia pudding ingredients in a small glass jar and refrigerate overnight
  3. Put all the raspberry compote ingredients in a small pan and heat for few minutes (you can refrigerate and use as topping for other breakfast meals)
  4. In the morning put the oats, chia and yogurt in your breakfast bowl and top with the compote, raspberries and coconut
