Stuffed dates are a must-try for anyone searching for a new appetizer or snack for almost any occasion. They look fancy while being so easy to prepare, and with almost endless flavor varieties, they’re practically a guaranteed crowd-pleaser. And let’s not forget the many benefits of dates, either.

Between dinner parties, potlucks, Christmas, Ramadan, game days, and more – these stuffed Medjool dates will fit right in and disappear in moments. They also make for a healthy, child-approved snack. With just a few base ingredients and minimal effort, there are practically endless variations for making these filled dates.

I’ve shared just a few of my favorites below – including a sweet-savory cheese, nut, and honey stuffed date or decadent sweet nut butter and chocolate variety. With a balance of sweet, savory, creamy, tangy, and crunchy flavors and textures (enjoyed chilled or warm!), you can make a delicious stuffed dates appetizer or healthy sweet snack in just minutes.

Plus, depending on your chosen fillings, these filled dates can also be gluten-free, paleo, and vegan, and the sweet version is perfect for curbing unhealthy cravings!

What Do Dates Taste Like?

It can be a little hard to pinpoint the exact flavor of dates, which are the tropical fruit from date palm trees. However, having made plenty of date paste and date-based caramel sauce, I think this sticky sweet fruit (nicknamed nature’s candy) has a subtle caramel-like flavor, with hints of honey/toffee and even a little cinnamon.

What Are the Best Dates to Stuff?

It’s best to use dates that are large, plump, soft, and meaty, with space for filling – like Medjool dates. However, you could use amber dates, too.

My Favourite Ways to Stuff Dates

The flavor of dates makes them a perfect pairing for savory and sweet stuffings with ingredients likely already in your kitchen.

No matter which stuffing you choose, the first step is to slice a slit down the side of each date and remove the pits (save these for date pit coffee!) so they open like a book, leaving space for stuffing.

Goat Cheese Stuffed Dates

This goat cheese appetizer version combines the sweet flavors of dates with the salty, tangy flavor of goat cheese, the crunch of nuts, and super sweet honey for super satisfying, well-balanced appetizers with dates.

Ingredients for stuffed with cheese dates
  1. Stuff each of the dates with goat’s cheese.
  2. Then, press some crushed walnuts into the top of the cheese and drizzle with honey.

For roasted goat cheese stuffed dates, transfer the stuffed fruit to a baking tray and bake for 5 minutes at 350ºF/175ºC. Once roasted, drizzle with the honey (or hot honey and/or balsamic vinegar).

Steps for stuffing dates with cheese and walnuts

Flavor Variations: You can also use different types of cheese:

  • Blue cheese (like Picante, Roquefort, or Gorgonzola),
  • Feta,
  • Ricotta (with walnuts and thyme),
  • Cream cheese.

And for extra flavor to this “gourmet” stuffed date appetizer, you can:

  • Add a small amount of fresh herbs like fresh thyme or rosemary,
  • Add fruit, like pomegranate seeds, sliced apple/pear, or dried cranberries,
  • Spoon in a little fig jam or other fruit preserves,
  • And/or wrap the filled dates with a length of prosciutto or make bacon-wrapped dates. Then optionally bake them on a baking sheet until the prosciutto/bacon is crispy and the cheese oozes (10-15 minutes).

Stuffed Dates with Nut Butter and Chocolate

This version is my favorite healthy sweet snack with dates and tastes like a healthy Snickers bar. They’re sweet, rich, creamy, and delicious.

Ingredients for stuffing dates with almond butter
  1. Spoon about ½-1 teaspoon of your favorite nut butter into each date (i.e., peanut butter, almond butter, tahini, etc.), then gently close them.
  2. Meanwhile, melt dark chocolate in a microwave or using a double boiler, pierce the dates with a wooden skewer, then gently dip each date into the melted chocolate. Alternatively, add a small chocolate chunk to the center of each date instead.
  3. Transfer them to a cooling rack to cool, optionally sprinkle with a little sea salt, and then leave to cool and set.

Other topping options: crushed nuts, shredded coconut, cacao nibs, freeze-dried fruit, shaved chocolate, etc.

Stuffed Dates with Nuts

The simplest of all options, this stuffed dates recipe just adds a single nut for a little crunch. You can use an almond, pecan, walnut, pistachio, etc.

The Best Stuffed Dates Ever (Multiple Ways)

Ingredients 
 

  • 9 dates Medjool work best; use as many dates as wanted

Measurement guidance to stuff 3 dates with each option – use more or less to taste and date size

    Option 1

    • 1 Tbsp goat cheese or cream cheese, blue cheese, ricotta, feta
    • 1 Tbsp walnuts or pecans/other nuts
    • 1 tsp honey and/or balsamic glaze
    • Optional toppings fresh thyme/rosemary, pomegranate seeds, sliced apple/pear, fig jam, etc.
    • Optional wrapper Prosciutto or bacon (thin)

    Option 2

    • 1 Tbsp almond butter or nut butter of choice/tahini
    • 1 oz chocolate or chocolate chips to melt
    • 1/4 tsp sea salt to sprinkle, optional
    • Optional toppings crushed nuts, shredded coconut, cacao nibs, freeze-dried fruit, etc.

    Option 3

    • 3 almonds whole; or another nut: pecans, walnuts, pistachios, etc.

    Instructions 

    • Slice down the side of each date and remove the pit so they open like a book, leaving space for stuffing.
      Save the pits for date pit coffee!

    Cheese Stuffed Dates

    • Stuff each of the dates with about 1 tsp of goat's cheese.
    • Press some crushed walnuts into the top of the cheese and drizzle with honey or any other toppings.
      For roasted goat cheese stuffed dates, transfer the stuffed fruit to a baking tray and bake for 5 minutes at 350ºF/175ºC. Once roasted, drizzle with the honey (or hot honey and/or balsamic vinegar). 
    • If you decide to wrap them in prosciutto or bacon, then secure them with a toothpick and transfer them to the oven to bake for 10-15 minutes for proscuitto, and 20-25 minutes for bacon, flipped halfway.

    • Add a single nut to the center of the date for a little crunch. You can use an almond, pecan, walnut, pistachio, etc.

    Notes

    • Use the best dates: Filled dates work best with Medjool dates, which are plump and soft.
    • Use an assembly line: It’s best to do each part of the recipe at the same time rather than completing a single date at a time. i.e., first, add the cheese to all dates, then the nuts, etc.
    • Don’t overstuff: Especially if you plan to bake them, as the cheese will all ooze out. However, note that if you leave them to cool for a few minutes on the tray, the cheese should still attach to the dates so you don’t lose it.
    • Spoon vs. piping bag: I find it just as easy to use a spoon, but you may prefer using a piping bag to add soft fillings (like goat cheese/cream cheese).
    • Use a toothpick if needed: This is more of an issue when wrapping and baking them, but it is great to help to flip them while baking AND hold the meat in place.
    • Experiment with variations: Between a few base elements (cheese, nuts, herbs, toppings), there are probably hundreds of variations you can try.
    How to Store
    Make ahead: You can prepare the stuffed Medjool dates 1-2 days in advance and store them covered in the fridge. If you plan to bake them, store them unbaked.  
    Store: Once prepared, baked versions are best consumed immediately (or at least on the day of). Most other versions will store for 3-5 days in an airtight container in the refrigerator.  
    Freeze: Some options, like the chocolate-dipped ones, are freezer-friendly for 3-4 months. However, I haven’t tried freezing any of the cheese varieties.
