This Healthy rainbow summer salad is perfect for entertaining! With a tropical mango twist and rainbow veggies including sweetcorn & avocado, this fresh and delicious salad is sure to impress!

  • 2 cups lettuce
  • 1 cup cherry tomatoes
  • 1 red onion
  • 1 avocado
  • 2 limes
  • 2 sweet corns on a cob
  • 1 mango
  • a handful of cilantro
  • 1 chilli pepper
  • 2 tBsp olive oil
  • salt & pepper to taste

Instructions

  1. Boil the corn on medium heat for 5-7 minutes. Alternatively, you can microwave it for 3-4 minutes on high power. 
  2. Chop the veggies and juice the lime. 
  3. Mix all ingredients,  top with olive oil, salt & pepper and cilantro.
