This simple watermelon salsa is delicious and refreshing and takes just 5 minutes to prepare. Enjoy it with chips straight from a fun watermelon bowl or serve it with grilled meats or tacos.
1cupbell peppersdiced, optionally different colors
1jalapeño peppersto taste
1/3cupcilantrochopped
1/4cupfresh mintchopped
1/4cuplime juicefrom 2 limes
Instructions
Cut the watermelon into bite-sized pieces. Remove the seeds as you go along if you'd prefer. If you want to serve the salsa in a watermelon bowl, keep half a cored watermelon shell.
Cut the bell peppers into small pieces and mix with the watermelon in a large bowl.
Dice the jalapeño peppers and chop the cilantro and mint. Add them to the salsa along with the lime juice. Mix to incorporate. Serve and enjoy!
