Beautiful, simple rainbow goat cheese rolls with a mixture of vegetables and edible flower toppings. Perfect to impress as an appetizer, as part of a party spread, a cheese board and a vegetarian BBQ recipe!
Mash the cheese with a fork into a homogeneous mix then form rolls with your hands. Put the rolls in the fridge for at least 10 minutes.
In the meantime, thinly slice your veggies. (I like to use a mandoline to get really thin slices however you can also use a vegetable peeler or simply be really careful with a knife).
I chose rainbow carrots, rainbow radish, cucumber, cucamelon but you can select your favourites. It's important to slice them as thin as possible so that it's easy for each piece to wrap around the cheese roll.
Ready to assemble - on a piece of cling film, arrange some herbs, a slice or two of the veggies, and some flowers.
Put the cheese roll on top and carefully wrap the cling film around it so that all the ingredients get stuck around the cheese.
Put the rolls back in the fridge for a little bit so they become firmer. (If you're in a rush then 20 minutes should suffice however I'd suggest a few hours if you have the time to spare!) Then you can unwrap the cling film - the veggies and the herbs should be stuck around each roll.
Serve as an appetizer as part of a party spread, cheese board or a great vegetarian BBQ recipe.
