These pink berry lettuce wraps are filled with avocado, berries, and salad veggies- for a healthy, sweet and savory treat. Plus, this berry salad is vegan, gluten-free, and keto-friendly!
Since this recipe uses lots of fresh produce and edible flowers, the first step is to rinse everything well. You can use a vinegar or salt water soak on the berries, if preferred. This will get rid of any critters clinging to the berries.
Be careful with the edible flowers. It's best to rinse these as they can come with some critters in the box, however, don't be too rough with them. Gently immerse in water.
Once washed, carefully pat all ingredients dry with a kitchen towel.
Step 2. Chop The Ingredients
Depending on the size of your lettuce leaves, you'll have to cut your berries into smaller pieces. I usually slice strawberries a few times, just half blackberries/raspberries, and leave currants whole.
Step 3. Prepare the Avocado mash
As much as I love a chunky guacamole style avocado dip, when combined with this berry salad, I love my avo super smooth. Simply place the avocado and some lemon or lime juice into a small blender and blend until smooth.
If you prefer a chunkier texture then you can mash it by hand, with a fork, until the desired texture.
The lemon/lime will help to keep the avocado from browning, as well as add flavor. Feel free to increase the amount you use, depending on your personal preference.
Step 4. Prepare the salad wraps
Lay the lettuce leaves out in front of you. First, spoon in a little of the avocado mixture and spread across the leaf. This will help to adhere the rest of the fillings to it, to stop them falling out.
Next, add onions (if using), a few berries, edible flowers, and herbs. Plus any other optional add-ins.
I will usually serve the dressings in small jugs beside the lettuce wraps. That way guests can choose which salad dressing they want to use and pour it just before eating, so nothing goes soggy.
How To Store
These lettuce wraps are definitely best eaten immediately. Over time the avocado mixture will oxidize and brown and berries are best eaten fresh.Any leftover lettuce wraps can be kept in an airtight container for a day or two, maximum.
To reduce waste, you could serve these as a 'create your own' station. That way guests can take exactly how many wraps they want and fill with the toppings. Any remaining berries and ingredients can then be stored separately in airtight containers in the fridge for up to two days.
