Oven roasted green beans (baked string beans) are a quick, simple, and delicious side dish for any meal! Low carb, vegan, gluten-free, paleo, whole30, and super versatile!
Preheat the oven to 425ºF/220ºC (or to 400ºF/200ºC fan-assisted).
Prepare the Fresh Green Beans
Rinse the beans in a colander and pat them dry. Make sure they are completely dry.
To trim green beans, grab a handful of the beans and place them on a cutting board with the stem ends lined up. Using a long, sharp knife, slice off the ends of the beans, then flip them over and repeat. Do this with all the beans.If any of the beans have tough strings running down the seam of the pod, remove them now, too.
How Long to Roast Green Beans
Transfer the prepared green beans to a large baking sheet and drizzle with the oil, salt, and pepper. Toss well to coat.
Roast the green beans at 425ºF/220ºC (or at 400ºF/200ºC fan-assisted) for around 12-15 minutes, flipping/tossing them halfway.
Taste and adjust the seasonings of the sauteed green beans, then serve them optionally with a drizzle of lemon juice!For more citrus flavor, zest the lemon first and add about a teaspoon of the zest to the green beans in the oven.
Can You Roast Frozen Green Beans?
Simply preheat the oven. Then toss the frozen green beans with the oil and seasonings just before spreading them across the baking tray.If your green beans have lots of excess ice, I recommend rinsing off the excess and patting them dry.
Roast the frozen green beans for 25-30 minutes at 450ºF/230ºC, flipping them halfway.
Storage Instructions
Make ahead: You can rinse, dry, and de-string the green beans 2-3 days in advance. Store them in an airtight container in the fridge until you're ready to roast the green beans. Store: Store any leftover oven-roasted green beans in an airtight container for 3-4 days in the refrigerator, making them great for meal prep.Freeze: If you want to freeze the baked green beans, they will become very soft upon thawing. However, they are fine to freeze in an airtight container/Ziplock bag for up to 4 months. Freeze them within an hour of roasting them for the best results.Reheat: I prefer to reheat the roasted green beans in a skillet with a small amount of oil or butter. You could also reheat them in the oven at 400ºF/200ºC for 15-18 minutes until warm. Avoid a microwave unless you don't mind soft beans.
Notes
To save time: You can purchase the green beans already trimmed.
Trim the beans: If you have whole green beans, trim them and remove any tough strings, as they’re tough and fibrous.
Ensure the beans are dry: Any water droplets can lead to soggy roasted green beans.
Adjust the cooking time: Based on how tender you want the oven green beans to be on the inside and depending on the size of the beans. For example, thinner beans like Haricot Verts will require less time.
Don’t crowd the baking green beans: Air flow will help them to crisp up rather than just steam and stay limp. Spread them in a single layer with some space between them.
