Instructions
Prepare the Toast
Spread a thin layer of softened butter over both sides of the bread. Using a pastry brush, lightly brush both sides with olive oil.
Heat a dry skillet over medium heat. Add the bread and toast until crisp and golden on the underside. Flip and toast the other side.Transfer the toast to a toast rack or keep it separate and uncovered so it stays crisp.
Make the Fluffy Scrambled Eggs
Crack the eggs into a small bowl. Add the water, if using, and whisk thoroughly until completely combined.
Melt the butter in a nonstick skillet over medium heat without allowing it to brown.
Pour in the eggs and leave them undisturbed for a few seconds, until they just begin to set around the edges.
Using a silicone spatula, gently push and fold the cooked egg from the edges of the pan toward the center. Continue making slow, broad folds as the eggs cook.
Remove the skillet from the heat while the eggs are still slightly glossy and soft. Season with salt and black pepper. The residual heat will finish cooking them.
Pile the scrambled eggs onto the toasted bread and add your chosen topping.
For the Avocado Toast
Squeeze the lime juice over the sliced avocado. Arrange the avocado over the scrambled eggs and finish with chili flakes, flaky salt, and black pepper.
For the Mushroom Toast
Add the sliced mushrooms to a dry skillet over medium-high heat. Cook until they release their moisture, then continue cooking until the liquid has evaporated.
Add the butter and minced garlic and cook until the mushrooms are golden and the garlic is fragrant. Add the thyme toward the end and season with salt and black pepper.
Pile over the scrambled eggs and garnish with additional fresh thyme.
For the Spinach Toast
Heat the olive oil over low to medium-low heat. Add the sliced garlic and gently fry until crisp and golden.
Remove the garlic with a slotted spoon or small sieve and set aside, leaving the garlic-infused oil in the skillet.
Add the spinach and season with salt and black pepper. Cover briefly until wilted, then uncover and cook until any excess moisture has evaporated.
Pile the spinach over the scrambled eggs, crumble over the feta, and finish with the crispy garlic chips.
For the Smoked Salmon Toast
Arrange the smoked salmon over the scrambled eggs. Finish with fresh dill, everything bagel seasoning, and black pepper if desired.
Notes
For the fluffiest scrambled eggs, keep the heat under control and remove the eggs while they're still slightly glossy. Overcooking is what makes scrambled eggs dry and rubbery.
The optional tablespoon of water can help create a lighter texture by producing steam as the eggs cook.
The base recipe makes one generous scrambled egg toast. If making all four toast variations at once, use 12 eggs and 4 slices of bread, multiply the scrambled egg and toast ingredients by four, and prepare one quantity of each topping.
For the toast, spread the softened butter directly onto the bread first, then brush it lightly with olive oil before placing it in the dry skillet.
