cherry tomatoes
or plum tomatoes; red or rainbow work

Instructions
Preheat oven to 400ºF (200ºC).
Rinse and dry the cherry tomatoes, then place in an oven-safe dish.
Drizzle with olive oil and sprinkle with salt and pepper.
Roast for 20–25 minutes, or until blistered and tender.
Serve warm, or let cool to room temperature. Spoon over dishes or store for later.
Notes
Use non-reactive bakeware (glass, ceramic, or stainless steel).
For smoky flavor, broil for 2–3 minutes at the end.
