A bright and satisfying white bean salad loaded with fresh herbs, crunchy vegetables, feta, and a simple lemon dressing. Ready in about 15 minutes and perfect as a side or light meal.
2(15-ounce) cans cannellini beansdrained and rinsed
1cupcherry tomatoeshalved
1cupEnglish cucumberdiced
1/3cupred onionfinely chopped
1/3cupgreen olivessliced or halved
1/2cupfresh parsleychopped
2tablespoonsfresh mintchopped
1tablespoonfresh dillchopped
1/3cupfeta cheesecrumbled
Dressing
1/4cupextra virgin olive oil
3tablespoonsfresh lemon juice
1small garlic cloveminced or grated
1teaspoonDijon mustard
1/2teaspoondried oregano
1/2teaspoonsea salt
1/4teaspoonblack pepper
Instructions
Add the olive oil, lemon juice, garlic, Dijon mustard, oregano, salt, and black pepper directly to a large serving bowl. Whisk until smooth and combined.
Add the drained and rinsed cannellini beans, halved cherry tomatoes, diced cucumber, red onion, green olives, parsley, mint, and dill to the bowl.
Gently toss everything together until the beans and vegetables are evenly coated in the dressing. Be careful not to crush the beans.
Scatter the crumbled feta cheese over the top.
Taste and adjust with extra lemon juice, salt, or a drizzle of olive oil if needed.
Serve immediately, or chill in the fridge for 20 to 30 minutes before serving to let the flavors come together.
