This vibrant ABC juice blends apple, beet, and carrot into a naturally sweet, earthy, and beautifully colored drink that comes together in just a few minutes.
1Green applemedium, cored (green apple is recommended for tartness, but any variety works)

Instructions
Scrub the apple, carrots, and beet well under cold running water. Core the apple and remove the seeds. Peel the beet if you prefer a milder, less earthy flavor. Cut any produce down to a size that fits through your juicer's chute.
Feed the apple, beet, and carrots through the juicer, alternating between them to keep the extraction smooth.
Taste and adjust. If needed, stir in the lemon juice. If the flavor is too sweet, add more lemon juice. If it tastes too strong or earthy, stir in a splash of cold water to mellow it out.
Pour over a glass of ice and serve immediately for the best flavor and color.
Blender method
Add the chopped apple, beet, and carrots to a high-speed blender with 1/2 cup of water. Blend on high until completely smooth. Pour through a nut milk bag or fine-mesh strainer set over a large bowl and squeeze firmly until all the juice is extracted. Pour over ice and serve right away.

Notes
Apple variety: Green apples like Granny Smith give the juice a pleasant tartness. If using a sweeter apple such as Fuji or Honeycrisp, add lemon juice to balance the sweetness.
Beet intensity: If you are new to beet juice, start with a smaller beet and add cold water to taste. The beet flavor can be strong at first.
Storage: Best served fresh. Store in an airtight jar in the fridge for up to 24 hours. Stir or shake well before serving as separation is normal.
Freezing: Freeze in a freezer-safe container for up to 2 months. Leave a little room at the top for expansion. Thaw overnight in the fridge and stir before serving.
