Every time I make a batch of ABC juice, I’m reminded of how something so simple can taste so good. Apple, beet, and carrot together create this gorgeous deep pink drink that’s naturally sweet, a little earthy, and genuinely refreshing. It’s become one of my go-to ways to use up produce before it turns, and it takes less than five minutes to pull together.

It’s easy to customize by adjusting the apple, beet, or carrot to suit your taste. Plus, you can add a touch of lemon juice to balance the flavors to your liking.

ABC juice ingredients

Ingredients needed to make ABC juice.
  • Apples: Green apples like Granny Smith add a pleasant tartness that balances the sweetness of the beet and carrot. If your apple is on the sweeter side, add a squeeze of lemon juice to compensate. Fuji, Gala, Honeycrisp, and Pink Lady all work well too.
  • Beet: One medium raw beet gives the juice its deep pink color and earthy flavor. Look for a firm beet with smooth skin. Red beets are sweeter and more vibrant than golden beets, making them the better choice here.
  • Carrots: Large, firm carrots yield the most juice and help mellow the intensity of the beet. They add a gentle natural sweetness and a smooth body to the blend.

How to make ABC juice

Start by giving your produce a good scrub under cold running water. There is no need to peel anything unless you prefer to, though peeling the beet will give you a slightly milder, less earthy result.

Juicer method: Core the apple and remove the seeds before juicing. Cut anything down to a size that fits your juicer’s chute.

Feed the apple, beet, and carrots through the juicer one at a time, alternating between them to help the machine run smoothly. The juice will come out a deep, vivid pink-red color. Once everything is juiced, you can optionally add a squeeze of fresh lemon juice and stir gently.

Taste and adjust. If it feels too sweet, add more lemon. If it tastes too earthy or strong, add a splash of cold water and stir again. Pour over a glass of ice and serve right away for the best flavor and color.

Blender method: If you are using a blender instead of a juicer, add all the chopped produce to the blender along with about half a cup of water. Blend on high until completely smooth, then pour the mixture through a nut milk bag or fine mesh strainer set over a large bowl. Squeeze and press firmly until all the juice has been extracted. Pour over ice and serve immediately.

If you are new to beet juice, start with a smaller piece of beet and add more cold water to taste. Beet flavor can be strong at first, and diluting slightly makes it much easier to enjoy while you get used to it.

Serving suggestions

ABC juice is best served immediately, poured over a glass of ice. It makes a great breakfast drink alongside a bowl of overnight oats or a slice of avocado toast. For a post-workout option, serve it chilled straight from the fridge without ice.

Ingredients  

  • 1 Green apple medium, cored (green apple is recommended for tartness, but any variety works)
  • 2 carrots large, scrubbed
  • 1 beet medium, scrubbed (peeled if you prefer a milder flavor)
  • 1/2 lemon juiced – optional to balance the flavors (adjust to taste)

Instructions 

  • Scrub the apple, carrots, and beet well under cold running water. Core the apple and remove the seeds. Peel the beet if you prefer a milder, less earthy flavor. Cut any produce down to a size that fits through your juicer’s chute.
  • Feed the apple, beet, and carrots through the juicer, alternating between them to keep the extraction smooth.
  • Taste and adjust. If needed, stir in the lemon juice. If the flavor is too sweet, add more lemon juice. If it tastes too strong or earthy, stir in a splash of cold water to mellow it out.
  • Pour over a glass of ice and serve immediately for the best flavor and color.

  • Add the chopped apple, beet, and carrots to a high-speed blender with 1/2 cup of water. Blend on high until completely smooth. Pour through a nut milk bag or fine-mesh strainer set over a large bowl and squeeze firmly until all the juice is extracted. Pour over ice and serve right away.

  • Beet intensity: If you are new to beet juice, start with a smaller beet and add cold water to taste. The beet flavor can be strong at first.
  • Storage: Best served fresh. Store in an airtight jar in the fridge for up to 24 hours. Stir or shake well before serving as separation is normal.
  • Freezing: Freeze in a freezer-safe container for up to 2 months. Leave a little room at the top for expansion. Thaw overnight in the fridge and stir before serving.
