Learn how to make roasted carrots with a few pantry-stable ingredients in under 30 minutes. Adding honey will bring out their natural sweetness, turning them into a caramelized, appetizing side dish.
Wash and peel the carrots. Cut them into even-sized pieces (about 2 inches).
On a baking tray, combine the cut carrots with olive oil, honey, salt, and black pepper. Toss well until the carrots are evenly coated. Spread the seasoned carrots in a single layer.
Roast in the preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway.Cooking time may vary depending on the size of your carrot pieces. Thicker pieces may require an additional 5-10 minutes of roasting time. Check for tenderness with a fork. Carrots should be easily pierced but still hold their shape.
Once tender and lightly caramelized, remove the roasted carrots from the oven and optionally garnish with fresh parsley before serving.
