Add the oats to a food processor and blitz until they have a flour consistency. Then, add the remaining base ingredients and blitz for a further 1-2 minutes until the mix is fully combined.
Turn out and press into a baking tray or silicone mold so it forms an even layer, then refrigerate.
Make The Chocolate Layer
Melt the chocolate chips in a heat-proof bowl over a double boiler, stirring occasionally. You can also do this in the microwave in 10-15-second bursts.
Pour the melted chocolate over the peanut butter layer and return to the fridge to completely set.
Once set, slice into squares or bars and enjoy.

To Store: Once chilled, to keep the bars firm, store them in an airtight container in the fridge for up to 4 days. Alternatively, these are freezer-friendly for up to 3 months.
