This simple watermelon salsa is delicious and refreshing and takes just 5 minutes to prepare. Enjoy it with chips straight from a fun watermelon bowl or serve it with grilled meats or tacos.

Watermelon is the perfect go-to summer ingredient for everything – starters, salads, desserts, and more. So this fresh watermelon salsa is sure to become your new favorite summer recipe. It needs a few ingredients and a few minutes to make and it will be a great addition for any special occasion, get-together, or BBQ cookout. Not to mention that you can serve it inside the watermelon shell for a true showstopper!

Ingredients for watermelon salsa
  • Watermelon: You can use leftover chopped watermelon or dedicate a whole watermelon to use for this recipe.
  • Bell peppers: For crunch. I like using different colors to create a rainbow look.
  • Jalapeño peppers: For heat. Omit or use other less or more spicy chilies.
  • Herbs: I love adding cilantro and mint for freshness and flavor.
  • Lime juice: To add brightness to the salsa. Alternatively, use lemon juice.

How to make watermelon salsa

Cut the watermelon into small, bite-sized pieces. Feel free to remove the seeds as you go along if you’d prefer! Then, chop the bell peppers into small pieces and mix them with the diced watermelon in a large bowl.

Dice the jalapeno peppers and chop the cilantro and mint. Then add them to the fruit salsa along with the lime juice. Toss to incorporate.

Steps for making watermelon salsa

Voila – a delicious fruity BBQ recipe for this summer! Serve and enjoy with tortilla chips as a snack or appetizer. You can also enjoy it alongside grilled meats, chicken tacos, and more!

You can use keep one of the cored watermelon halves and use it as a serving bowl.

Ingredients  

  • 4 cups watermelon diced (about 3 lb watermelon flesh)
  • 1 cup bell peppers diced, optionally different colors
  • 1 jalapeño peppers to taste
  • 1/3 cup cilantro chopped
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup lime juice from 2 limes

Instructions 

  • Cut the watermelon into bite-sized pieces. Remove the seeds as you go along if you'd prefer.
    If you want to serve the salsa in a watermelon bowl, keep half a cored watermelon shell.
  • Cut the bell peppers into small pieces and mix with the watermelon in a large bowl.
  • Dice the jalapeño peppers and chop the cilantro and mint. Add them to the salsa along with the lime juice. Mix to incorporate. Serve and enjoy!
