Breakfast Burrito


I love burritos and I love the idea of making breakfast burritos. I didn’t add rice here as in traditional burritos but I can see it really working well with this recipe :-).

Ingredients

Ingredients:

  • 3 Burford Browns eggs
  • 1/2 tablespoon olive oil
  • 1 tablespoon water
  • 1 diced chilli pepper
  • 1 minced clove garlic
  • 1 small red onion, diced
  •  tortillas wraps / cups
  •  hot salsa (optional)
  • 1 avocados, baby tomatoes & dill (to garnish – optional)



Directions

  1. Heat the tortillas or the tortillas cups in a preheated oven according to the package instructions.
  2. Whisk eggs with 1 tablespoon of water to help make them light and fluffy 🙂
  3. Drizzle olive oil into a heated pan, add hot peppers, garlic and onion and fry for about 2 minutes.
  4. Add the eggs and fry for few minutes (similar to scrambled eggs).
  5. Add the scrambled eggs to the toasted tortillas.

  6. Top with whatever you like. I added some more hot salsa, avocado slices, baby tomatoes and dill.

Simple Oceanic Chia Recipe
This is such a simple but beautiful chia recipe for a morning, oceanic chia pudding. Chia seeds are packed full of nutritional goodness and the spirulina powders are used to boost the recipes' already amazing health properties ( and create the gorgeous colours). The maple syrup and vanilla create a lovely subtle sweet flavour, low in refined sugars.

Instructions
  1. Mix all the chia ingredients together and stir well. Allow to soak for at least 30 minutes stirring well to avoid clumps (best overnight in the fridge).
  2. To stick fruits/veggies on the side of the jar, make sure to cut the fruit/veggie really thin and make sure the glass is dry.
  3. When chia pudding is ready, divide into three equal portions and add the green spirulina in one and the blue in the other and mix well (you will end up with three colours: white, blue and green)
  4. Layer them all and top with any toppings you like.
