These 5 quick & easy, healthy recipes are so perfect as a make-ahead breakfast for someone who’s always on the go and struggling to find ways to make breakfast fun again. Plus these healthy dessert inspired options are sure to thrill anyone with a sweet tooth ( especially with delicious vegan salted caramel!)

You may already have come across my recipes for Mango overnight oats or Strawberry overnight oats (among many others)- This time I have something a little bit different; Dessert inspired!! Think carrot cake, apple pie, cookie dough, strawberry cheesecake and salted caramel!

The best thing is, overnight oats are just SO versatile. With a quick to prepare, simple base recipe of oats, milk and sweetener of your choice you can then experiment with all sorts of flavour combinations. Not to mention that they are great as a healthy meal-prep option for the entire week and a perfect way to get in some delicious, organic fruits & veggies into your diet!

I personally love to include chia seeds within my mixture too – not only to help thicken the dish but also for fact that chia seeds are an absolute powerhouse of nutrients, easily packing in additional protein too without being too calorie dense.

Carrot Cake Overnight Oats Recipe:

Not only are these oats absolutely delicious but they are a great way to sneak more veggies into your diet. This recipe can easily be made vegan by using a plant-based yogurt and is a healthy, refined sugar free, dessert inspired recipe for breakfast!

Ingredients

Layer 1 – Oats:

  • 1 cup rolled unprocessed oats
  •  1 tbsp chia seeds
  • 1 carrot, grated
  • 1.5 cup hemp milk (or your preferred milk)
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • Handful of raisins

Layer 2 – Yogurt:

  • 1 cup Greek yogurt (or your favourite plant-based yogurt)
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Decoration (optional):

  • a few edible flowers (completely optional)
  • a handful of pecans
  • a pinch of cinnamon

Directions

  1. The first thing to do is to prepare the oats. Start by grating one carrot. Then, mix the rolled oats with the chia seeds, adding the milk, grated carrot, spices and raising. Stir well. Set aside to soak for at least 10 minutes or, for best results, keep in the fridge overnight.

Ingredients

  • 1.5 cup almond milk
  • 1 cup rolled unprocessed oats
  • 1 tbsp chia
  • 1 tbsp maple syrup
  • Apple pie spice (½ tsp ground cinnamon, ¼ tsp ground nutmeg, ⅛ tsp ground cardamom)

Layer 2 – Yogurt:

  • 1 cup yogurt of your choice

Layer 3 – Apple:

  • 1 cup apple purée (can be homemade with 2 apples)

Now it might sound a bit odd but this peanut and cacao nib combination really does make the perfect, healthy ‘cookie dough’ flavour for me without all the guilt. Plus this recipe is easily vegan when swapping the yogurt out for a dairy-free version.

Layer 1 – Oats:

  • 1.5 cup hemp milk
  • 1 cup rolled unprocessed oats
  • 1 tbsp chia
  • 2 tbsp peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp cacao nibs

Layer 2 – Yogurt:

  • 1 cup yogurt ( Plant-based, if wanted)

Decoration (optional):

  • Dark Chocolate
  • a few peanuts

Directions

If I could squeeze this healthy, vegan salted caramel into every single meal of the day I think I would. These salted caramel oats are not only 100% dairy-free & vegan but are also refined sugar free and so deliciously more-ish!

Ingredients

  • 1 cup oats
  • 1tBsp chia
  • 1.5 cup almond milk

Layer 2 – Vegan Salted Caramel :

  • 6 dates
  • 2 tbsp peanut butter
  • 1 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 1-2 tbsp drinking water, in case mix, is too thick

Layer 3 – Yogurt:

  • 1 cup of coconut yogurt

Decoration (optional):

  • 1 banana
