How to make avocado toast with egg: fried, boiled, scrambled, or poached; for a delicious, nutritious, protein-packed breakfast, brunch, snack, or light meal in under 10 minutes! Plus, optional toppings, so you'll never become bored!
There are several ways to enjoy egg and avocado toast: Scrambled eggs: I recommend scrambling at least 2 eggs at a time for 1 person.Fried eggs: Sunny side up, with a runny yolk, is my favorite way of enjoying fried egg avocado toast. Simply add some oil or butter to a pan, crack in the egg, and cook until set. For a firmer yolk, cook it with a lid on until your desired firmness.Poached eggs: Perfect to cut into and have the yolk ooze out over the avocado toast. If you’re using small eggs, use 2 per person.Boiled eggs: Cook them to your liking (jammy or hard-boiled) and slice over the toast.
Prepare the Avocado
Meanwhile, as your eggs cook, prepare the mashed avocado topping. First, slice the avocado in two, lengthwise, and gently twist and pull apart. Then, use the bottom of your knife (not the tip) to lodge firmly in the pit, twist, and remove.
Peel away the skin or scoop the flesh directly from it with a spoon into a bowl. Mash it with salt, pepper, garlic powder, chili flakes, and lime juice. Adjust to taste.For the most texture, use a fork or potato masher. If you want it super smooth, use a blender.
Assemble the Toast
To toast the bread, either use a toaster or pan-fry it lightly brushed with oil. For larger crowds, toast it in the oven for 10-12 minutes at 350ºF/175ºC.
To assemble the eggs and avocado on toast, first spread over the mashed avocado, add the egg, and then top it with your favorite toppings. I usually use hot sauce or chili flakes. Enjoy!
Storage Instructions
To make ahead: Mashed avocado is best eaten immediately, though it will store for a day or two when made with plenty of lemon/lime and in an airtight container.Store: Once assembled, it's best to immediately eat the avocado toast with egg. The avocado will brown, and the toast will go soggy quickly.

Make sure the avocado is ripe: Under-ripe, and it'll be chunky and hard to mash. Overripe, and it'll be mushy and yucky.Use plenty of lime/lemon juice: To keep the avocado green until you eat it.Experiment with the toppings! I've included plenty of optional toppings, so have fun finding your favorite avocado egg toast combination.
Fresh herbs: Experiment with different herbs to find your favorite. For example, chives, scallions, dill, thyme, oregano, parsley, cilantro, fresh basil, micro herbs/microgreens, etc.
Spices: You can experiment with different spices like smoked paprika, cumin, chili powder, or even za'atar for more flavor!
Nuts/Seeds: These will help to add healthy fats, protein, and crunch to the healthy avocado toast. I.e., sesame seeds, sunflower seeds, pumpkin seeds, this omega seed mix, crushed nuts, etc.
Everything but the bagel seasoning: for flavor and crunch.
Pesto: Thinly spread over the toast or drizzle on the egg for more flavor.
