Eggplant Recipes: Roasted Eggplant Rounds

This is one of my favorite eggplant recipes, and it’s also one of the easiest to make.
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4

Ingredients 
 

  • 2 large eggplants
  • 1/4 cup olive oil or another neutral cooking oil.added
  • salt to taste

Instructions 

  • Preheat the oven to 480ºF/250ºC.
  • Slice the eggplant into ½-inch rounds.
  • Brush each slice with the oil and then season with salt, to taste.
  • Arrange the eggplant in a single layer on a parchment-lined baking sheet; use more trays if necessary.
  • Roast at 480ºF/250ºC for 25–30 minutes, flipping halfway. The eggplant is ready when tender inside, golden, and lightly crisp on the edges.
