Eggplant Recipes: Roasted Eggplant Rounds
Ingredients
- 2 large eggplants
- 1/4 cup olive oil or another neutral cooking oil.added
- salt to taste
Instructions
- Preheat the oven to 480ºF/250ºC.
- Slice the eggplant into ½-inch rounds.
- Brush each slice with the oil and then season with salt, to taste.
- Arrange the eggplant in a single layer on a parchment-lined baking sheet; use more trays if necessary.
- Roast at 480ºF/250ºC for 25–30 minutes, flipping halfway. The eggplant is ready when tender inside, golden, and lightly crisp on the edges.
